Title: Sugar Bacon

SPIRIT OF CHRISTMAS; BOOK 1
1tsMustard, Dijon
2tsWorcestershire sauce
1/8cSugar, brown
13/16 Egg yolks
4slBacon
3/8cBread crumbs; fine

Preheat oven to 250 F. Beat mustard, Worcestershire, sugar, and egg yolks together. Dip bacon in mixture and roll in crumbs. Place bacon in broiler pan and bake 20 minutes, until brown and crispy.

Sylvia's comments: this wasn't as sweet as you'd think from the title. The coating adds a sweet tang to the bacon's own flavor. The temperature and/or time had to be a printing error; I double-checked it in the book but thought it must be absurd, I've baked bacon before. Regular thin strips take 20-25 minutes at 350 F. With the coating, this never really got crisp; I gave up after 20 minutes at 300 and another 30 minutes at 350. Nice taste, but too much trouble for everyday use.
